South Beach Ginger Chicken Crockpot Recipe

This is one of the simplest recipes available for the crockpot and for people on the south beach diet, it comes in very handy. The crockpot is great because you can make a meal and let it cook, go excercise, go do watever, and then comeback to a healthy cooked meal without any worries. This is why I love the crockpot, for those days I don't want to be in the kitchen for hours after work.
South Beach Ginger Chicken Recipe Ingredients
4 boneless, skinless chicken breasts
1/2 tsp salt
1/2 tsp pepper
3 cloves of ginger, crushed
2 slices of lemon

I woud recommend first grilling the chicken breast first but thats optional. Next I would combine all the salt, pepper, garlic, and squeezed lemon juice into a small plastic bag along with the chicken breasts and let it marinate for about 30 minutes. Pour the contents of the bag into the crockpot and cook on low for about 8 hours for a meal that fits the south beach diet.
